This is literally the best oatmeal I’ve ever had. AND I’VE HAD A LOT OF OATMEAL IN MY DAYS.

 

Right off the bat, you may be wondering what a lame blogger I am that I can’t spell “oatmeal” correctly. This, my friends, is not a horrible spelling mistake. There’s oatmeal, and then there is ZOATMEAL.

Zoats are a magical thing that was discovered via Instagram (oh Instagram, you are too good to be true). The premise of zoats is that you add shredded zucchini to your oatmeal. Why? Well, you definitely get a few more nutrients in there. But more importantly, for the orally fixated munchers out there, you get to keep eating and eating and eating, while adding only a few calories. By cooking your oatmeal with zucchini, you can double the volume and make it healthier all while tasting virtually the exact same (maybe even better!). This is the only way I eat my oatmeal these days.

But I digress…

Why are these the best (z)oats ever? Because I discovered a dangerously delicious product: coconut manna.

Let me rant about coconut manna for a while now: if coconut oil is like peanut oil, coconut manna is like peanut butter. HOLY F**KING S**T”  is what you must be thinking. That’s what I thought when I first saw it. But then I received my iherb package. I popped the lid, took out a spoon, and airplane-d that stuff right into my mouth. Uuuguuguhhhh. I am a coconut LOVER. So trust me when I say, it does not get better than this.

Now back to the oatmeal…

Here is the recipe for the best oats you’ll ever have… until I find a new concoction and blog about it :P

What you will need

1/2 cup quick oats (or quick steel cut oats)

1/2 cup zucchini, grated

1 cup unsweetened almond milk

1 tsp cocoa or cacao powder

1 tbsp coconut manna (if you don’t have it, I usually make this with peanut butter instead)

1/4 tsp stevia

1 banana

Directions

Simmer the oats, zucchini, almond milk, cocoa and stevia on a small pot on medium heat for 5 minutes, stiring every minute so it doesn’t stick to the bottom. when the oatmeal is at your desired consistency, turn off the heat and add the coconut manna. Serve with some shredded coconut or a banana. Eat. Repeat every morning until you are sick of it (aka never).

caution: do not buy coconut manna if you do not have enough will power to avoid eating it all with a spoon before you even put it in your pantry.

 

The best part about this breakfast is the health benefits and weight control potential. The oats keep you fuller longer while giving you tones of energy for your workout. The zucchini and banana offers a nice dose of vitamins. And the coconut... well... that's a whole other blog post. Long story short, coconut is the ultimate health food
